2010 ROSE PROFILE

With Valentine’s Day fast approaching, I thought it might be nice to speak a few words about our Rose.  The Rose we make at the Grange is always lovely and well received by the public, I attribute this to the production process.  Our Rose has always been built from scratch. That is from day 1 we know it’s going to be a Rose and not just an after thought of two blended wines (a white and a red.)  We start with our Pinot Noir and Gamay grapes which we destem and cold soak on the skins for 48 hours.  Then we press and ferment at a cold temperature.  Being a highly aromatic wine, we bottle it in winter with our release date being Mother’s Day, this year is no exception.  The 2010 Rose has a deeper red colour than past vintages(ripe year,) with fresh aromas of Strawberry and Cherry followed by notes of red currants.  The wine is tad drier than past vintages as that’s what the wine wanted (I listen to the wine.)  Overall, a great wine from a great vintage.  For those seeking Rose for Valentine’s Day there are still a few cases of 2009 at the Winery and I believe some bottles left at the LCBO.

CHEERS,

Adam Delorme – Winemaker

In keeping with Cabernet Franc month, I thought I might pen a few words about the 2009 Cabernet Franc.  I should first begin by saying Cab Franc might be my favorite red we grow.  Year after year the quality of the fruit is exceptional and the wines no different.  As the vines begin to age, the resulting wines get bigger and bolder.

The 2009 Cab Franc is still relaxing in barrel, French barrels ranging in age from new to 3 years old.  They have been in for 14 months and will probably remain there for another 3-4 months if the quality keeps improving.  At the Grange we keep wine in the barrel as long as it keeps improving and stays in balance.  It can be tricky as you have to imagine what the wine might be like in 3 years and if it will still be in balance.

The colour is the deepest to date, I would call it deep garnet.  The nose resembles raspberry compote with vanilla and cocoa…sounds like a dessert.  The tannins are quite firm as it has been in barrel for 14 months, but the wine should be drinking well in about 2 years.  The finish is long and spicy.  I’m very proud of this wine as we are developing a following for our Cabernet Franc.  This one will surely please.

2007 Pinot Noir Chocolate
This estate wine has a bright red fruit nose with hints of cigar box from 11 months in French oak. An elegant wine that is smooth and supple on the palate with a sweet core and a lively sour cherry finish is paired with a Venezuelan 65% dark chocolate which creates a chocolate with medium depth on the palette and strong fast finish.
Light residual tannin.

2007 Merlot Chocolate
This chocolate matches a 2008 Madagascar Madrirofolio 65% dark chocolate with notes of raspberry and flint, medium residual tannin and a medium weight with a strong fast finish  is complemented by  a fabulous nose with cedar, vanilla, ripe plums, mocha and black pepper from the merlot.
